LA RÉSIDENCE: FIRST PARISIAN RESTAURANT AND TRAINING PLACE DEDICATED TO REFUGEE CHEFS 

Every 2 to 6 months, La Résidence welcomes a new French refugee chef who takes control of the restaurant’s kitchen to share his/her cuisine and the flavors from his/her country of origin with the general public.

Wherever they are from, all the chefs invited to officiate at La Résidence are professional cooks looking for a new experience. This restaurant is destined to be a professional stepping stone: accompanied by chefs Stéphane Jego (L’Ami Jean) and Mohammad Elkhaldy, the guest chefs can use this space to express themselves, test their cooking and refine their talents.

The chefs invited to La Résidence will be accompanied by Mohammad Elkhaldy, renowned Syrian chef, food consultant, and ambassador of the Refugee Food Festival, and by Stéphane Jégo, patron of La Résidence and famous Parisian chef at L’Ami Jean restaurant.

The guest chefs all have a professional project in cooking and wish to be trained, accompanied, or simply to test themselves. La Résidence wishes to give them these possibilities.

Wherever the chef of the moment is from, he/she cooks with quality, fresh and organic products, from local producers and in short circuits!

THE PATRONS OF LA RÉSIDENCE

Two great chefs, patrons of La Résidence, support our project! They bring their expertise and participate in the training of the invited chefs.

Chef Stéphane Jégo  L’Ami Jean

Stéphane Jégo, from L’Ami Jean restaurant, has been involved with the Refugee Food Festival since the beginning of the project, welcoming several of the festival’s cooks in his kitchen. His commitment to the festival created beautiful collaborations and a desire for him to go one step further, by accompanying La Résidence’s chefs.

Chef Mohammad Elkhaldy – Catering events

Mohammad Elkhaldy comes from Damascus. At the age of 16, he sets foot in a kitchen for the first time, and it is love at first sight. Twenty years later, his reputation as a chef goes beyond the borders of his native Syria, from Dubai to Cairo, to Lebanon. In 2015, forced to leave his war-torn country, he arrived in France with his wife and three children, after crossing Italy, Germany and Denmark.
At only 37 years old, Chef Elkhaldy now uses his exceptional talents in France, with a view to share his cuisine, flavors and the richness of Syrian culture.

LA RÉSIDENCE IN GROUND CONTROL

LA RÉSIDENCE TOOK ITS QUARTERS IN GROUND CONTROL, RIGHT NEXT TO “GARE DE LYON” TRAIN STATION.

Ground Control is a multidisciplinary, independent, cultural and gourmet living place, which promotes social, ecological and citizens’ initiatives. The Therefore, it seemed only fitting that La Résidence should take its roots in this place of experimentation and discovery!
